漁場:豊後水道は暖かい黒潮と栄養豊富な瀬戸内海の冷たい海水がぶつかり合う豊かな漁場です。豊後大島では豊富なプランクトンに育まれたイワシ、エビやイカを食べて程よい脂がのり、身の締った真鯛が釣れます。

大島の一本釣り:撒餌を使わない伝統的な一本釣り漁業が盛んです。

Harvesting:Wild madai are mainly caught off shore of Kyushu Island, however Bungo-suido channel has good characteristic for fishing, because Kurishio ocean current and cold water fllow into these area is one of best place for both wild and farmed madai.

Best season:From Winter to Spring
How to fish:Ippon-zuri(catching by one fishing rod)
Recommended recipe:Madai is widely appreciated row as sashimi in Japanese style, however we can enjoy in carpaccio or other way these days. Amino acid glycine will be increased by aging.
