大島一本釣り Ippon-zuri fishing in Bungo Oshima

豊後水道の豊かな漁場に囲まれた大島では撒餌を使わない熟練した一本釣り漁師により伝統的な漁法が行われています。
神経〆を行い最高の鮮度でお届けをします。
一本釣りの漁業は高齢化と人口減少により徐々にその姿を変えつつあります。
漁師さん一人ひとりの誇りに答えられるようシェフの方々に直接お届けし、生産者の想いがお客様に伝わるストーリーを紡いで行きたいと思います。

Bungo Oshima is a rather small island located around 600m from Tsurumi peninsula and facing Bungosuido channel which breed various fishes. Fisherman is proudly practicing ippon-zuri fishing, so called fishing by one rod or line and hook. Traditionally they never use ground bait which attract fish and do instant killing just after fishing by “Ikejime” to remove nerve and brood to keep its meat fresh until chefs cook.
However we are facing shortage of successors to maintain this traditional method due to aging population, therefore we would like to bridge communication between fisherman and guest at restaurant to deliver motivation to them.
